Guinness™ BBQ Sauce

You might wonder why go to the trouble of making your own barbecue sauce when there are so many out there to choose from. It’s hard to find a commercial sauce that doesn’t have pepper and some heat to it, and that’s a problem if you have to avoid those. When you make your own, heat is optional. This is our favorite homemade sauce. You can tailor it to your taste just by adjusting the amount of sugar and vinegar.

 

guiness bbq1½ cups ketchup
¾ to 1½ cups apple cider vinegar
2 tablespoons fresh lemon juice
½ to 1 cup dark brown sugar
1 bottle Guinness™ beer
1½ tablespoons garlic powder
1½ tablespoons dry mustard
½ teaspoon salt
black pepper and cayenne pepper to taste (optional)

Makes about 2 cups.

Equipment:  Natural gas cooktop

Mix all ingredients together in a medium saucepan. Bring to a boil, then reduce to low heat. Simmer uncovered for 3 hours or until the mixture has reduced to a medium thick consistency. Serve with ribs, brisket, pulled pork, or chicken. This will keep in the refrigerator for up to two weeks.
